Main role and objectives: Assist in managing all F&B employees. Support the efficient running of the F&B operations, overseeing the whole of F&B in the absence of the F&B Manager. Adhering to all required laws and agreed operating standards. Ensuring exceptional standards of service of service and product are delivered at all times while maintaining a consistently high degree of client care. Your responsibilities: Responsible for managing the Food and Beverage operation. Be fully knowledgeable of all F&B operations. Welcome and greet all guests in a friendly, professional and sincere manner following company standards. Follow up on guest satisfaction and make guests feel comfortable. Ensure all customer requests are responded to promptly and effectively. Put forward ideas for improving the service standard and profitability of the hotel. Encourage extra sales to guests at every opportunity and ensure the staff are prompted to upsell. Promote a helpful image to clients and give full co-operation to any customer requiring assistance displaying a caring and helpful attitude, anticipating customer?s needs whenever possible, to enhance quality service and in turn enhance client satisfaction. Assist in developing a new Menu and drink list on a regular basis in conjunction with the F&B Manager and Chef. Ensure a Standard of Operational Procedures manual is up-dated constantly and trained Operate Micros computer systems on a managerial level and produce adequate reports at the end of each shit Deal with complaints appropriately and report them to the manager. Be aware of any shortfalls in standards and correct them in a timely fashin Ensure team is aware of Medallia and current Medallia scores. Provide full co-operation to any colleagues requiring assistance in a friendly and helpful manner. Maintain effective communication within the team and attend hotel meetings and training sessions when required. Hold daily staff briefings when on duty. Know how to use all equipment and systems in you department. Liaise daily with Chef in charge to discuss specials and food availability Be fully knowledgeable regarding stock takes results and actions. Control daily beverage, dry store and stationary stock, ensuring sufficient stock levels in all areas. Liaise with Purchasing Manager for requisitions and stock levels. Ensure the food and beverage team are fully trained in service techniques, all available menus, drinks lists and cocktails offered in the Bar, Restaurant and Room Service and are trained on the correct standards of service Clean as you go, ensuring both public areas are kept clean and tidy at all times and that staff adheres to departmental cleaning schedules. Daily checklists are in place and spot check on a daily basis. Be conversant with budgeted and actual revenue and costs within the F&B and assist in controlling all operating costs. Understand the aims of the hotel and your department and that the F&B staff is aware of these as well. Follow guidelines regarding the control of waste in your department. Be prepared to assist in other departments and carry out other reasonable tasks and responsibilities outside normal routine but within the overall scope of the job as deemed necessary by management. All training needed to be highlighted to the F&B and HR Managers Attend and participate in monthly F&B BRMs Assists F&B manager with sales and marketing plan.
