Magical | Respectful | Innovative | Passionate | Consistent We have an exciting opportunity for an experienced Director of Food and Beverage to be part of a new chapter and lead our extensive F&B offering. It is expected that this position would be available to cover at least three Saturdays per month and three evening services a week). Responsibilities of the role: To take responsibility for the food production and service delivery of food and beverages in a. Banqueting. b. Restaurant and Bar 88. c. Valerias champagne and cocktail bar. d. Fletchers all day dining (including breakfast, lunch, afternoon tea and dinner) e. Marquee and courtyard operations. f. Off site catering. g. Norton Bar h. Room Service i. Spa dining. ? To represent all food and beverage production and service, including Signature, at the senior leadership level. ? Compilation and delivery of training collateral for use in all areas, including Signature, that ensures service standards are met. ? Effective use and maintenance of the systems provided by Grantley Hall to ensure effective management of the F&B areas such as updating Procure Wizard, Alacer and Flow Training. ? To ensure that the F&B operation meets all required Health and Safety and other legal requirements. ? Compilation of all liquor and food menus, excluding Signature, to meet cost of sales targets and sales targets. ? Management of staffing to achieve the required budgeted wage percentage, excluding Signature. ? Management of expenses to achieve the required percentage to turnover, excluding Signature. ? Management and motivation of the teams to achieve the training and development goals of Grantley Hall. ? Fulfil the duties of the Director of Food and Beverage to the standard of the Grantley Hall Management Principles. ? To work closely with the Signature Restaurant Team to ensure that they are reaching their sales objectives. ? To manage the duty management function through an Operations Manager, trainee managers and duty managers. ? To develop and manage the trainee management function alongside the Training and Development Department. ? To deputise for the General Manager during days off, holidays and time away from site. Additional Pre-opening Responsibilities. ? To compile the vision and mission for the food and beverage outlets. ? To work closely with the other food and beverage consultants. ? To arrange purchase and delivery of all food and beverage items using the Grantley Hall systems. ? To source and engage suitable suppliers. ? To engage and employ staff, supervisors and managers. ? To understand and set up the required Grantley Hall system. ? To undertake the re required training of the teams. To compile all menus, both food and liquor excluding the Signature Restaurant Competencies Management Ability ? Is able to demonstrate a clear understanding of a business profitability and how to achieve that. ? To be able to demonstrate an effective training regime. ? Has a track record in running multiple kitchens. ? Can demonstrate an understanding of the different service levels required in different restaurants. ? Is able to understand a Profit and Loss Account and can demonstrate good business acumen. ? Can use excel and word. ? Understand the systems the Grantley Hall is implementing or has used similar systems. ? Is used to working in small teams and can demonstrate being efficient and effective time management. ? Is able to understand the dynamics within a family run business. Operational Ability Signature Restaurant ? Has cooking ability that has been recognised to AA 3 rosettes standard. Banqueting. ? Has demonstrable knowledge of the kitchen being installed at Grantley Hall. ? Can provide details of quality banqueting menus that they have delivered. ? Be able to deliver choice menus at banqueting numbers. Restaurant and Bar 88 and Spa Dining. ? Be able to show an understanding of recent restaurant and food trends. ? Be able to show an understanding of the Pan-Asian market. Valerias champagne and cocktail bar. ? Be able to show an understanding of entertainment venues. Fletchers all day dining (including breakfast, lunch, afternoon tea and dinner) ? Has worked at 4 red star or 5 star country house hotel operations. ? Can demonstrate attractive secondary food provision such as afternoon tea, room service and snack menus. ? Can demonstrate the provision of a traditional country house breakfast. ? Can show a good understanding of the operation of the restaurant front of house. Marquee and courtyard operations. ? Has experience in marquee operation and service. Off site catering. ? Has experience if high quality catering provision away from site in a variety of outlets. Norton Bar ? Is able to demonstrate comprehensive knowledge of wine, spirit and beers. ? Can show a good understanding of the operation of the bar front of house. Personal Requirements. ? To be local to the area and hotel. ? To have been resident in the area for a substantial time. Development Potential. ? To be able to develop to Deputy General Manager/General Manager.
