Job Description The recently opened Courtyard by Marriott Oxford South is looking for a Food and Beverage Manager to join the team. Oxfordshire, at the 4th annual Food & Drink Awards by LUX Life.Do you have the Magic in you to create memorable experiences all for the love of fun?Do you wish to cast a spell of laughter and enjoyment to the people around you?Do you want to join a team that creates smiles and memories globally on a daily basis?Then you have the magic to be a Food and Beverage Manager, overseeing the Oxen bar and Grill and Meetings and events operations at the Courtyard by Marriott Oxford South GENERAL DESCRIPTION The basic purpose of the Food and Beverage Manager is to manage the total guest experience from start to finish ensuring every guest receives an experience that is faultless, seamless, and simply full of heartfelt, acts of awe. This role oversees the restaurant, lounge bar, meetings and events operations. You will deep dive into to the guest journey across all departments with a focus on food and beverage operations. Our guests expect you to have a smart, neat appearance which reflects the highest standards of Marriott. Attitude should be one of confidence and professionalism whilst recognising that customer satisfaction is of paramount importance. You recognise that team effort and excellent communications skills are the keys to success. Responsible to manage the food and beverage operation to maximise profitability. Responsible for ensuring superior service and product quality are maintained to Courtyard by Marriott standards. To maximise team performance to deliver excellent customer care to all guests. In charge of rosters and operations planning of the restaurant and event and meetings department. OPERATIONS AND STANDARDS To ensure smooth running of the Food and Beverage operation daily, delegating where appropriate and implementing pre-shift and post-shift briefings. To ensure all Courtyard by Marriott standards are always followed in the F&B area.· To prepare rotas to meet business needs and ensure that staffing levels and cost are kept within budget.· Ensure effective purchasing practices in line with purchasing manuals and budgets.· To attend and input into HOD meetings in line with Company standards.· To be responsible for the all the equipment within the F&B operation· To ensure that Duty Manager shifts are completed to Courtyard by Marriott and hotel standards ENSURING EXCEPTIONAL CUSTOMER CARE To promote efficiency, confidence and courtesy within the hotel at all times.· Ensure guest requests are carried out in a timely, efficient and professional manner· To actively seek verbal feedback from customers and act on feedback both positive and constructive.· To generally promote and ensure good inter-departmental relations· Always have a up to date knowledge of all hotel services and functions. Ensure the highest standard (both internal and external) customer care is always delivered · Work closely with the Sales team to ensure a co-ordinated approach to customers· Ensure all guest complaints relating to the F&B operation are actioned no later than 48 hours and the necessary procedure is implemented to ensure there is no recurrence.· Promote good working relationships with regular guests, the city council, local businesses and the Police.· Monitor trip advisor and complaint feedback for F&B department and action plan accordingly within weekly business review. DEVELOPING & EXECUTING SALES AND MARKETING STRATEGIES To identify and action any potential sales leads. To maximise sales within the hotel. To ensure all F&B team upsell at every given opportunity To lead the sales opportunities within the F&B team, setting an example to other team members. Promote loyalty of your customers thereby ensuring maximum average spends and total revenues are achieved on a weekly, monthly and yearly basis. Develop and complete the menu engineering monitoring documents to enable the F&B operation to continually assess its F&B offers and develop an open forum for continual assessment and improvement TEAM AND PERSONAL DEVELOPMENT Working with your line manager/Head Chef and the team, agree departmental objectives and cascade to the team· Ensure all F&B team are aware of their responsibilities and their roles within the hotel.· To ensure recruitment and selection, training and appraising of staff is carried out with the F&B department in line with hotel and legal requirements and Courtyard by Marriott standards.· Ensure that all F&B team have documented food safety training on induction and complete Level 2 Food Safety qualification within 6 months of starting work.· Carry out quarterly job chats and annual appraisals of all team members to identify training needs and to set department and individual goals in line with company goals and objectives· Advise General Manager of development needs of the F&B Team· Recommend F&B staff for recruitment, transfer or promotion if required.· Direct food and beverage team meetings, ensuring communication is effective and consistent and a two-way communication process, chair these meetings when necessary. MAXIMISING REVENUE & MANAGING PROFITABILITY Understand the annual budget in relation to the food and beverage department · Ensure monthly crockery, cutlery and glass checks are completed in the specified manner. · To ensure all departmental orders are placed, controlling delivery, requisitions in place for stock movement, and P&L reporting.· To forecast and control wage cost effectively. And prepare time sheets for payroll and sign off by General Manager.· Completion of month end package: accurate physical stock take of all liquor within the hotel, entering information onto stock sheets, cross checking pricing, collection of management accounts, completing beverage cost summary. LEGAL RESPONSIBILITIES Ensure all Health and Safety and Food Hygiene regulations are in place for bar, beer and liquor store and cleaning schedules are in place and completed.· Health and Safety: ensure that all risk assessments are completed in F&B areas and are reviewed at least on an annual basis, or according to risk assessment guidelines.· Ensure all health and safety, food safety and fire training is completed by bar team following legislation and best practice information DESIRABLE EXPERIENCE Up to 2 years? experience as a restaurant manager or meetings and events manager in a hotel or a high street, independent restaurant or a current F&B manager in a branded hotel.
