Food & Beverage Supervisor - London Key Accountabilities Ensure yourself and all staff are customer focused Ensure adequate staff for business level Plan ahead and anticipate business needs Ensure schedules are in place to cover all tasks within the department you are allocated to Communicating with the team regarding the day?s business Be polite and courteous to customers at all times Deal with customers comments and complaints seeking your Manager?s or the Duty Manager?s support where necessary Interact with customers and build rapport with them Explain the menu options in full for Restaurant, Bar, Room Service and Conference & Events Greet and seat all customers in a polite and friendly manner, and to liaise with them and the restaurant team to ensure that their meal experience is enjoyable Recommend and explain confidently all dishes and drinks on the menus and inform the customers of any specials Be confident in advising on or recommending dishes and drinks available Communicate with the kitchen on availability of dishes those dishes in smaller quantities Ensure that the department is set up and mis-en-place is completed to the required standard. Ensure that there are sufficient stocks of crockery, cutlery; for the smooth running of the shift Support the staff members and assist them in any way possible Ensure all staff are trained in sales skills Ensure all staff are aware of how to up sell and that they do Keep staff informed through daily team briefings Ensure stock and cash procedures are in place Ensure departmental training of staff is completed and recorded with all records being pass to HR Ensure legal notices are displayed in the departments Ensure all new employees receive departmental induction training, standards training and Health and Safety training Contribute to positive team morale and encourage, recognise and reward employees when necessary Complete corrective training where necessary as discussed with departmental trainer Report any performance or conduct issues to the appropriate departmental Manager Ensure the opening and closing of shift is completed and that any monies, credit card information and room charge documentation are passed for banking and processing Check customers needs throughout meal for additional sales opportunities Ensure bills are legible, complete and accurate Obtain customers signature for items purchased Secure correct payment for bills Liaise with Reception guest credit limit Follow stipulated cash handling and security procedures Ensure all sales are recorded and charged to customer account on MICROS system Co-operate with all team members, including those from other departments Ensure that the Company standard on dress code, personal appearance and hygiene is adhered to at all times Always arrive on duty at the correct time Develop and maintain good working relationships with all departments in the hotel Attend all relevant training as and when required Conserve energy by turning off equipment and lights when not in use Show willingness to take on additional responsibilities when necessary. Be involved in setting up promotions / targets & incentives Identify sales opportunities to increase revenue Be aware the services and facilities offered by the hotel Be aware of GP margins Be aware of the main selling brands Assist in the cellar stock control to be able to account for all stock through controlling requisitions form cellar, bars, kitchen etc Ensure effect scheduling of staff in line with business needs Provide feedback to the team on quality issues Implement and monitor all cleaning schedules Secure stock from unauthorised access Ensure all keys/floats are correctly signed in/out & kept secure Be responsible for any cash shortages in the banking during the shift Control the Food and Beverage stock and keep wastage to a minimum Communicate with other departments by attending the daily morning meeting, (HOD) Food and Beverage meeting at 10.30 and the weekly Function Sheet meeting on Wednesday C&E Check the function sheets of the daily business Prepare all Conference and Event rooms according to Danubius Operating Standards Have a thorough knowledge of and adherence to the law with regard to the following Company regulations: Fire regulations and procedures Health and safety regulations First aid procedures Licensing Law Smoking Policy Undertake special duties or work outside the normal daily/weekly routine but with in the overall scope of the position at the request of the Food & Beverage Manager Under the Asylum and Immigration Act 1996, evidence of eligibility to work and live in the UK will be required should you be invited to attend an interview.
