Key Accountabilities and Responsibilities:

Spice Room

  • Ensure all spices are weighed out correctly in accordance with product specifications.
  • Ensure all product passports are completed correctly.
  • Ensure that the area is cleaned to the highest standards. Ensure area is cleaned before next product commences to ensure no cross contamination of product occurs.
  • Ensure all allergens are stored separately. If there is any cross contamination of product this must be reported immediately to the Quality Manager and a full clean down must take place.
  • Do not operate machinery unless trained to do so.
  • Report any non conforming products to the Quality Manager or Shift Manager.
  • Ensure all spices both wet and dry are in date. Report any anomalies to the Quality Manager or Shift Manager.
  • Ensure stock rotation of all products.
  • Ensure all spices are prepared for the day's production. Any shortages must be reported immediately to the Kitchen Supervisor.
  • Ensure that all completed spices are correctly labelled and date coded. Ensure that completed product (wet) is stored in the fridges.
  • Ensure that the correct PPE is worn at all times.

Preparation

  • Ensure all products are weighed out in accordance with the product specification
  • Ensure all product passports are completed correctly and accurately.
  • Ensure that the area is cleaned to the highest standards. Ensure area is cleaned before next product commences to ensure no cross contamination of product occurs.
  • Ensure all allergens are stored separately. If there is any cross contamination of product this must be reported immediately to the Quality Manager and a full clean.
  • Do not operate machinery unless trained to do so.
  • Report any non conforming products to the Quality Manager or Shift Manager.
  • Ensure that all fridges are cleaned down on a daily basis.
  • Ensure fridge temperatures are working in accordance with the Critical Control Point parameters. Report any variances to the Shift Manager.
  • Ensure all spices both wet and dry are in date. Report any anomalies to the Quality Manager or Shift Manager.
  • Ensure stock rotation of all products.
  • Ensure all returned items to the storage fridges/ freezes are labelled with date of opening and best before dates.
  • Ensure that no wooden pallets are stored or used in Preparation.
  • Ensure that no Cardboard boxes are allowed into Preparation
  • Ensure all products are prepared for the day's production. Any shortages must be reported immediately to the Kitchen Supervisor.
  • Ensure that all completed products are correctly labelled and date coded. Ensure that all prepared product that is not being used straight away is stored in the holding fridge.
  • Ensure that the correct PPE is worn at all times.

General Accountabilities:

  • To fully co-operate with Operating Procedures and Company Policy and Procedures.
  • To undertake and attend any necessary training.
  • Ensure the Preparation area is operated in accordance with Health and Safety requirements.
  • To maintain the highest personal hygiene standards.
  • Ensure all Preparation areas are maintained and cleaned to the highest level of Hygiene standards.
  • Report any mechanical breakdowns immediately to the Kitchen Supervisor.
  • Report any accident or dangerous occurrence to the HR Manager
